Ingredients
  

  • 12 mini butter croissants
  • 100 gm butter room temperature
  • 75 gm castor sugar
  • 2 large eggs
  • 100 gm almond flour
  • 45 gm corn flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp dark rum
  • 2 drops almond extract
  • 50 gm castor sugar
  • 1 tsp vanilla
  • 125 ml milk
  • 75 ml heavy cream
  • 1 pinch salt
  • 100 gm flaked almonds
  • 45 gm granulated sugar
  • heavy cream for serving
  • icing sugar for dusting

Method
 

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine 100 gm of butter with 75 gm of castor sugar and mix until creamy.
  3. Add 2 large eggs, almond flour, corn flour, 1/2 tsp salt, baking powder, dark rum, and almond extract to the mixture and blend well.
  4. In another bowl, combine 50 gm castor sugar, vanilla, milk, and heavy cream; mix until well incorporated.
  5. Fold the wet mixture into the croissant mixture until evenly combined.
  6. Pour the mixture into a greased baking dish.
  7. Sprinkle flaked almonds and 45 gm granulated sugar on top.
  8. Bake in the preheated oven for 40 minutes or until golden brown.
  9. Allow to cool slightly before serving.
  10. Serve with heavy cream and dust with icing sugar if desired.
