Ingredients

Salad Greens & Harvest Toppings
  • 6 cups mixed autumn greens or baby spinach & arugula
  • 2 medium Honeycrisp apples cored and thinly sliced
  • 1/2 cup candied pecans or glazed walnuts coarsely chopped
  • 1/2 cup crumbled goat cheese or sharp feta
  • 1/3 cup dried ruby cranberries
  • 1/4 cup roasted pepitas (pumpkin seeds)
Maple Apple Cider Vinaigrette
  • 1/3 cup extra virgin olive oil
  • 3 tbsp raw unfiltered apple cider vinegar
  • 1 1/2 tbsp pure Grade A maple syrup
  • 1 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper

Method

Step-by-Step Instructions
  1. In a glass mason jar or small bowl, combine extra virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, kosher salt, and black pepper. Seal tightly and shake vigorously for 30 seconds until creamy and emulsified.
  2. Wash and spin-dry mixed greens or baby spinach. Transfer into a wide wooden salad bowl.
  3. Core and thinly slice the Honeycrisp apples into half-moons. Arrange gently over the bed of greens.
  4. Scatter the candied pecans, crumbled goat cheese, dried cranberries, and roasted pepitas evenly across the salad.
  5. Right before serving, drizzle the maple apple cider vinaigrette evenly over the top. Toss gently with salad tongs to coat every leaf without bruising the apples.
  6. Serve immediately alongside warm artisan crusty bread or seasonal soups!
