Baked Cranberry Brie Bites with Rosemary & Pecans

Ingredients
  

Pastry & Cheese Foundation
  • 1 sheet (approx 8 oz) all-butter puff pastry thawed but cold
  • 8 oz French Brie cheese wheel rind left on or removed, cut into 24 bite-sized cubes
  • 1 tbsp all-purpose flour for dusting the work surface
The Cranberry Topping & Crunch
  • 3/4 cup whole-berry cranberry sauce homemade or quality canned
  • 1/3 cup pecans finely chopped and lightly toasted
  • 2 tbsp fresh rosemary leaves finely minced, plus small sprigs for garnish
  • 1/2 tsp fresh orange zest optional, for festive citrus brightness
Finishing Glaze
  • 2 tbsp pure raw honey or hot honey warmed for drizzling
  • 1/4 tsp flaky sea salt optional, for finishing

Method
 

Preheat Oven & Prep Mini Muffin Pan
  1. Preheat your oven to 375°F (190°C). Generously spray a 24-cup non-stick mini muffin pan with neutral cooking oil or butter spray.
Cut the Puff Pastry Squares
  1. Lightly dust a clean work surface with flour. Unroll the cold puff pastry sheet and gently roll with a rolling pin into a smooth 10x15-inch rectangle. Using a sharp knife or pizza wheel, cut the pastry into 24 even squares (approx 2.5 inches each).
Form Pastry Cups & Add Brie
  1. Press each pastry square gently into a mini muffin cup, allowing the 4 corners to point upward to create an open cup shape. Place one cube of French brie cheese directly into the center of each cup.
Top with Cranberry, Pecans & Rosemary
  1. Spoon 1 rounded teaspoon of whole-berry cranberry sauce over each piece of brie. Sprinkle the tops with chopped pecans, minced fresh rosemary, and a touch of orange zest.
Bake to Golden Perfection
  1. Bake in the preheated oven for 14 to 16 minutes, until the pastry corners are puffed, deeply golden brown, and delightfully crisp, and the brie cheese is melted and bubbling gently.
Drizzle with Honey & Garnish
