  • 1/8 tsp salt
  • 1 stick unsalted butter room temperature, sliced
  • 2 large eggs
  • 4 Tbsp rum optional
Croissant Assembly
  • 8 pieces medium/large croissants one-day-old
  • 3 Tbsp sliced almonds for topping
  • powdered sugar for dusting

Method
 

Preparation Steps
  1. Preheat the oven and prepare a baking sheet.
  2. Slice the croissants in half lengthwise.
  3. In a bowl, mix the almond meal, sugar, and melted butter.
  4. Add eggs to the mixture and combine until smooth.
  5. Optionally, mix in rum for added flavor.
Assembly and Baking
  1. Spread the almond cream mixture over the croissant halves.
  2. Reassemble the croissants and place them on the baking sheet.
  3. Sprinkle sliced almonds on top.
  4. Bake in the preheated oven for 18 minutes or until golden.
