Ingredients
  

  • 1 cup whole-egg mayonnaise
  • ¼ cup sweet chilli sauce
  • 1 tbsp sriracha or hot chilli sauce optional
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 4 fillets salmon cut into 3 cm cubes
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • ¼ tsp freshly cracked black pepper
  • 1 tbsp soy sauce or tamari
  • 2 tbsp extra-virgin olive oil
  • 1 spring onion scallion finely chopped, plus extra to serve
  • ½ bunch coriander cilantro, finely chopped
  • 1 cup edamame beans thawed and drained
  • 3 tbsp extra-virgin olive oil or avocado oil
  • 1 tbsp all-purpose soy sauce or tamari
  • 1 tbsp rice wine vinegar
  • 1 tbsp sesame oil optional
  • 1 tsp freshly grated ginger optional

Method
 

Sauce Preparation
  1. In a bowl, mix together whole-egg mayonnaise, sweet chilli sauce, sriracha, honey, lime juice, sweet paprika, onion powder, and black pepper to create the sauce.
  2. Add the salmon cubes to the sauce and toss to coat evenly.
Cooking Salmon
  1. Heat 2 tablespoons of olive oil in a pan over medium-high heat.
  2. Add the coated salmon cubes to the pan and cook for 4-5 minutes, turning occasionally, until cooked through.
Edamame Salad
  1. In a separate bowl, combine edamame beans, spring onion, coriander, soy sauce, rice wine vinegar, and sesame oil (if using).
  2. Serve the cooked salmon over the edamame mixture, garnishing with extra spring onion if desired.
