Ingredients
  

Base
  • 4 medium bell peppers sliced in half and seeds removed
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup black beans cooked and drained
  • 1 medium tomato diced
  • 1/2 cup jalapeños sliced
  • 1/4 cup green onions chopped
  • 1/4 cup sour cream for serving
  • 1/4 cup guacamole for serving

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 400°F (200°C).
  2. Slice the bell peppers in half lengthwise and remove the seeds.
Assemble the Nachos
  1. Place the bell pepper halves on a baking sheet, cut side up.
  2. Layer the black beans, cheese, diced tomatoes, and jalapeños evenly over the bell peppers.
Bake
  1. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and garnish with chopped green onions. Serve with sour cream and guacamole.
