Ingredients
  

Tart Crust
  • 1 sheet puff pastry thawed
Filling
  • 3 medium red onions sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • 1 cup goat cheese crumbled
  • 2 tablespoons fresh thyme chopped

Method
 

Prepare the Tart Crust
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork and set aside.
Caramelize the Onions
  1. In a skillet, heat olive oil over medium heat. Add sliced red onions, salt, and sugar. Cook, stirring occasionally, until the onions are soft and caramelized, about 20 minutes.
  2. Stir in balsamic vinegar and cook for an additional 2 minutes. Remove from heat.
Assemble and Bake
  1. Spread the caramelized onions evenly over the tart crust. Sprinkle crumbled goat cheese and fresh thyme on top.
  2. Bake in the preheated oven for 25 minutes or until the pastry is golden brown.
Serve
  1. Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
