Ingredients
  

  • 2 tablespoons neutral cooking oil
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 cups cooked chicken, cubed or shredded
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can corn, drained
  • 1 10-ounce can diced tomatoes with green chilies, drained
  • 1 packet taco seasoning
  • 1 teaspoon garlic salt
  • 1 ¼ cups sour cream
  • 2 cups shredded Colby Jack cheese
  • 1 cup tortilla chips, crushed
  • ¼ cup chopped fresh cilantro optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the neutral cooking oil over medium heat. Add the diced onion and green bell pepper, and sauté until softened.
  3. Stir in the cooked chicken, black beans, corn, diced tomatoes (reserving ¼ cup of liquid), taco seasoning, and garlic salt. Mix until well combined and heated through.
  4. Remove from heat and stir in the sour cream until blended.
  5. Transfer the mixture to a baking dish and top with shredded Colby Jack cheese and crushed tortilla chips.
  6. Bake in the preheated oven for about 25 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped fresh cilantro if desired before serving.
