Ingredients
  

Filling
  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar adjust based on sweetness of cherries
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
Topping
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat the cherries evenly.
  3. Pour the cherry mixture into a greased baking dish.
Make the Topping
  1. In another bowl, mix together the oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
  2. Sprinkle the topping evenly over the cherry filling in the baking dish.
Bake
  1. Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the cherries are bubbling.
  2. Allow to cool slightly before serving.
