Ingredients
  

Pasta and Chicken
  • 8 oz pasta (fusilli or rotini) cooked and drained
  • 2 cups cooked chicken breast diced
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1 cup bell pepper diced
  • 1/2 cup black olives sliced
Dressing
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and set aside to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, bell pepper, and black olives.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss to combine. Garnish with fresh parsley.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
