Ingredients
  

Pasta and Chicken
  • 2 cups pasta (fusilli or rotini) cooked and cooled
  • 2 cups cooked chicken breast diced
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, black pepper, and dried oregano.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Serve chilled or at room temperature.
