Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise adjust to taste
  • 1 cup celery chopped
  • 1/4 cup red onion finely chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 4 slices bread your choice of type
  • 1 leaf lettuce for serving
  • 1 slice tomato optional, for serving

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, red onion, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Taste and adjust seasoning if necessary.
Assemble Sandwich
  1. Lay a leaf of lettuce on one slice of bread.
  2. Spoon a generous portion of the chicken salad onto the lettuce.
  3. Top with a slice of tomato if desired, then place another slice of bread on top.
  4. Cut the sandwich in half and serve immediately.
