Ingredients
  

For the Salad
  • 2 cups Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1 cup Corn canned or frozen
  • 1 cup Black beans drained and rinsed
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 avocado Avocado diced
  • 1 cup Tortilla chips crushed
For the Chicken
  • 1 pound Chicken breast boneless, skinless
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
For the Dressing
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons Lime juice
  • 1 teaspoon Honey
  • 1 teaspoon Cilantro chopped
  • 1 teaspoon Salt

Method
 

Prepare the Chicken
  1. Heat olive oil in a skillet over medium heat. Season the chicken breast with chili powder, cumin, garlic powder, salt, and black pepper. Cook for 6-7 minutes on each side until fully cooked. Remove from heat and let it rest before slicing.
Make the Dressing
  1. In a mixing bowl, combine Greek yogurt, lime juice, honey, cilantro, and salt. Whisk until smooth and set aside.
Assemble the Salad
  1. In a large serving bowl, layer the romaine lettuce, cherry tomatoes, corn, black beans, shredded cheese, and diced avocado. Top with sliced chicken.
  2. Drizzle the dressing over the salad and toss gently to combine. Add crushed tortilla chips on top for crunch.
