  • 1.5 cups quick oats
  • 0.5 cup vanilla protein powder
  • 0.5 cup riced cauliflower or oats
  • 0.5 cup black cocoa powder
  • 0.5 tsp baking powder
  • 1-2 tbsp honey or maple syrup
  • 0.5 tsp vanilla extract
  • 1.5 tbsp mini chocolate chips
  • 1.5 cups nonfat milk
  • 0.75 cup unsweetened applesauce or mashed bananas
  • 1 cup plain Greek yogurt or plant-based yogurt
  • 1 scoop protein powder
  • 1 tbsp white chocolate chips
  • 2 tsp mini chocolate chips

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (180°C).
  2. In a baking dish, combine applesauce (or bananas), oats, protein powder, riced cauliflower (or extra oats), cocoa powder, baking powder, honey or maple syrup, vanilla extract, mini chocolate chips, and milk. Stir until the mixture is smooth.
  3. If desired, sprinkle extra chocolate chips on top for added sweetness.
  4. Bake for 30-35 minutes or until the baked oats are firm to the touch.
  5. Let the dish cool completely before piping or spreading the protein topping on top.
  6. Cut into 6 servings and serve warm or cold, garnished with the protein frosting and a sprinkle of white and mini chocolate chips.
