Ingredients

Oat & Spiced Fruit Base
  • 2 cups old-fashioned rolled oats certified gluten-free if needed
  • 2 medium Honeycrisp or Fuji apples cored and diced into 1/2-inch cubes
  • 1/2 cup pecans or walnuts roughly chopped
  • 1 1/2 tsp ground Saigon cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
Maple Vanilla Custard
  • 2 cups whole milk or unsweetened almond/oat milk
  • 2 large eggs at room temperature
  • 1/3 cup pure maple syrup
  • 3 tbsp unsalted butter melted and slightly cooled (or coconut oil)
  • 2 tsp pure vanilla extract

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease an 8x8-inch or 9x9-inch ceramic or glass baking dish with butter or nonstick cooking spray.
  2. In a large mixing bowl, combine old-fashioned rolled oats, diced apples, chopped pecans, ground cinnamon, ground nutmeg, baking powder, and kosher salt. Toss until the spices and apples are evenly distributed throughout the dry oats.
  3. Transfer the oat and apple mixture into the prepared baking dish, spreading it out into an even layer.
  4. In a separate medium bowl or large measuring cup, whisk together whole milk, eggs, pure maple syrup, melted butter, and vanilla extract until completely smooth and emulsified.
  5. Slowly pour the spiced milk custard evenly over the oats in the baking dish, ensuring all oats are submerged in the liquid. Gently tap the dish on the counter to settle the liquid.
  6. Bake uncovered for 35 to 40 minutes until the top is golden brown, the edges are bubbly, and the center is set to a tender custard-like consistency.
  7. Allow the baked oatmeal to cool for 5 minutes. Slice into generous warm squares and serve with a drizzle of maple syrup, splash of warm milk, or a dollop of Greek yogurt.
