  • 3 tablespoons unsalted butter
  • 1 sweet onion, diced
  • 3 carrots, peeled and diced
  • 2 celery sticks, diced
  • 3 garlic cloves, minced

Soup Ingredients
  • ½ teaspoon poultry seasoning
  • 1 ½ cups cooked, shredded chicken
  • 6 cups chicken stock
  • 1 parmesan cheese rind
  • 1 cup uncooked orzo pasta
  • ½ cup milk
  • 1 teaspoon all-purpose flour
  • 3 tablespoons fresh parsley plus more for topping

  • lemon wedges for spritzing

Method
 

Cooking Steps
  1. Heat the butter in a large stock pot over medium-low heat.
  2. Add in the onion, carrots, celery, and garlic with a pinch of salt and pepper; cook, stirring occasionally, until the vegetables soften.
  3. Stir in the garlic cloves and poultry seasoning.
  4. Stir in the shredded chicken.
  5. Add the chicken stock and the parmesan rind; bring to a boil, then reduce to a simmer.
  6. Stir in the orzo pasta; cook uncovered, stirring occasionally, until the orzo is al dente, about 8 minutes.
  7. In a shaker bottle or bowl, shake or whisk together the milk and flour to form a slurry; pour this into the soup and simmer for another 1 to 2 minutes.
  8. Taste and season with more salt and pepper as needed; if the parmesan rind didn’t melt entirely, scoop it out at this point.
  9. Stir in the fresh parsley. Serve immediately with a lemon wedge, parmesan cheese, and parsley on top.
