Ingredients
  

  • 1 lb skinless salmon fillets
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce
  • 2 tbsp lime juice
  • 2 pcs green onions for topping
  • 1 tbsp sesame seeds for topping

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together mayonnaise, Sriracha sauce, and lime juice until smooth.
  3. Cut salmon fillets into one-inch cubes and coat each piece with the sauce, then roll in panko breadcrumbs.
  4. Place coated salmon on a lined baking sheet and bake for 15-20 minutes until golden brown.
  5. While the salmon bakes, prepare rice or greens as a base.
  6. Assemble bowls by topping rice or greens with crispy salmon bites and finishing with extra sauce, green onions, and sesame seeds.
