Crispy Smashed Potatoes

Deliciously crispy on the outside and fluffy on the inside, these smashed potatoes are a perfect side dish.

Ingredients
  

Potatoes
  • 2 pounds baby potatoes or any small potatoes
Seasoning
  • 1 teaspoon salt for boiling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
Oil
  • 1/4 cup olive oil
Fresh Herbs
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare the Potatoes
  1. Preheat the oven to 450°F (230°C).
  2. In a large pot, bring salted water to a boil and add the baby potatoes.
  3. Cook the potatoes for about 15-20 minutes until fork-tender.
Smashed and Seasoned
  1. Drain the potatoes and let them cool slightly.
  2. On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with a fork.
  3. Drizzle olive oil over the smashed potatoes and sprinkle with garlic powder, paprika, salt, and pepper.
Bake
  1. Bake in the preheated oven for 20-25 minutes until golden and crispy.
  2. Remove from the oven and garnish with fresh parsley before serving.

Notes

For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
