Ingredients
  

  • 4 medium Russet potatoes
  • 2 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crispy bacon bits
  • ½ cup sour cream
  • 2 tbsp chopped fresh chives
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes under cool water and pat dry.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Let cool slightly, then slice each potato in half lengthwise and scoop out some flesh, leaving a thin layer.
  4. Brush insides with olive oil, season with salt and pepper.
  5. Fill each skin with cheddar cheese and bacon bits.
  6. Return to oven for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Serve warm topped with sour cream and chives.
