Preparation
- In a large bowl, combine flour, 1 tablespoon of granulated sugar, and salt.
- Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Stir in sour cream until the dough comes together.
- Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out one disc of dough on a floured surface to about 1/8 inch thick.
- Cut into rectangles, about 4x6 inches.
- In a separate bowl, combine strawberries, 0.25 cup granulated sugar, cornstarch, and lemon juice.
- Place a spoonful of the strawberry mixture in the center of half of the rectangles.
- Top each with another rectangle of dough and seal the edges with a fork.
- Beat the egg with water and brush the mixture over the top of each pop tart.
- Bake for 15 minutes or until golden brown.
- Allow to cool before icing.
- For the icing, mix powdered sugar, milk, light corn syrup, and vanilla until smooth. Drizzle over cooled pop tarts and add sprinkles if desired.
