  • 1/2 cup ripe banana, mashed
  • 1 cup unsweetened almond milk
  • 1/4 cup smooth almond butter
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups whole rolled oats
  • 1 cup chopped pecans
  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons brown sugar (for topping)
  • 2 tablespoons coconut flakes (for topping)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the mashed banana, almond milk, almond butter, maple syrup, and melted coconut oil.
  3. Add the baking powder, cinnamon, sea salt, and whole rolled oats to the mixture, stirring until combined.
  4. Fold in the chopped pecans and blueberries.
  5. Pour the oatmeal mixture into a greased baking dish.
  6. In a small bowl, combine the brown sugar and coconut flakes, then sprinkle over the top of the oatmeal mixture.
  7. Bake in the preheated oven for 50 minutes, or until set and golden on top.
  8. Allow to cool slightly before serving.
