  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

  1. Cook lo mein noodles according to package instructions until al dente; drain and rinse under cold water.
  2. While noodles cook, chop carrots, bell peppers, and green onions; mince garlic.
  3. In a small bowl, whisk together soy sauce, sesame oil, brown sugar, and minced garlic.
  4. Heat vegetable oil in a large skillet over medium-high heat. Stir-fry the chopped vegetables for about 3-5 minutes until tender but crisp.
  5. Add cooked noodles to the skillet and pour in the sauce mixture. Toss until well combined and heated through.
  6. Serve immediately garnished with more green onions if desired.
