  • 2 pounds boneless, skinless chicken breasts
  • 1.5 cups yellow onion
  • 5 carrots
  • 1 pound baby Yukon gold potatoes
  • 3 sticks celery
  • 3 cups low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 0.5 tablespoon tomato paste
  • 4 teaspoons garlic (minced)
  • 1 teaspoon poultry seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon dried thyme
  • 2 bay leaves
  • 0.5 cup milk
  • 0.25 cup cornstarch
  • 1.25 cups frozen peas

Method
 

  1. Place the chicken breasts, yellow onion, carrots, potatoes, celery, chicken broth, Worcestershire sauce, tomato paste, garlic, poultry seasoning, black pepper, salt, dried rosemary, dried thyme, and bay leaves into the slow cooker.
  2. Cover and cook on low for 5 hours (300 minutes).
  3. After cooking, remove the bay leaves and shred the chicken into smaller pieces.
  4. In a small bowl, mix the milk and cornstarch until smooth, then stir it into the stew to thicken.
  5. Add frozen peas and cook for an additional 30 minutes.
