Ingredients
  

Egg Mixture
  • 8 large eggs
  • 1/4 cup milk can use almond or soy milk for dairy-free
  • 1 cup spinach fresh, chopped
  • 1/2 cup bell pepper diced
  • 1/2 cup cheddar cheese shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Muffin Cups
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the chopped spinach, diced bell pepper, shredded cheese, salt, and black pepper.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake the Muffin Cups
  1. Bake in the preheated oven for 18-20 minutes, or until the egg is set and lightly golden on top.
  2. Remove from the oven and let cool for a few minutes before removing from the muffin tin.
