Esquites is a traditional Mexican street food made with corn, lime, cheese, and spices, served warm in a cup.

Ingredients
  

Corn Base
  • 4 ears sweet corn or 4 cups of frozen corn
  • 2 tablespoons butter for sautéing
  • 1 cup water for boiling
Toppings
  • 1 cup crumbled cotija cheese or feta cheese
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon salt to taste
  • 2 tablespoons mayonnaise optional

Method
 

Prepare the Corn
  1. Remove the kernels from the corn ears using a sharp knife.
  2. In a pot, bring water to a boil and add the corn kernels. Cook for about 5 minutes until tender.
  3. Drain the corn and set aside.
Sauté the Corn
  1. In the same pot, melt the butter over medium heat.
  2. Add the cooked corn and sauté for about 5-7 minutes until slightly caramelized.
Assemble the Esquites
  1. Transfer the sautéed corn to cups.
  2. Top with crumbled cotija cheese, lime juice, chili powder, salt, and mayonnaise if using.
  3. Serve warm and enjoy!
