Blender & Griddle Walkthrough
- Blend Batter: Add cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, and sea salt into a high-speed blender. Blend on high for 45 to 60 seconds until completely silky, creamy, and aerated. Let the batter rest in the blender for 5 minutes so the oats hydrate and thicken.
- Heat Griddle: Preheat a large cast-iron skillet or nonstick griddle over medium-low heat. Melt 1/2 tablespoon butter to lightly coat the surface.
- Pour & Stud: Pour 1/3-cup mounds of batter onto the hot griddle, leaving 2 inches between pancakes. Immediately scatter a tablespoon of fresh blueberries directly on top of each wet pancake puddle.
- Cook & Flip: Cook gently for 3 to 4 minutes until tiny bubbles form around the set edges and the bottom is deep golden brown. Carefully flip with a thin spatula and cook the blueberry side for 2 to 3 minutes until puffed, cooked through, and golden.
- Serve Warm: Transfer hot pancakes to a warm plate. Top with a pat of farm butter, extra fresh blueberries, and a generous drizzle of warm pure maple syrup. Enjoy immediately!
