Ingredients
  

Tart Shell
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons ice water
Pastry Cream
  • 2 cups milk whole milk preferred
  • 4 large egg yolks
  • 1/2 cup sugar granulated
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
Topping
  • 2 cups fresh strawberries ripe and juicy
  • 1/4 cup apricot jam

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix the flour, cold butter, sugar, and salt until crumbly.
  3. Add ice water gradually and mix until the dough forms.
  4. Press the dough into a tart pan and prick the bottom with a fork.
  5. Bake for 20 minutes or until golden brown. Let cool.
Making Pastry Cream
  1. In a saucepan, heat the milk until just simmering.
  2. In a bowl, whisk together egg yolks, sugar, cornstarch, and vanilla extract.
  3. Slowly whisk the hot milk into the egg mixture.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
  5. Pour the pastry cream into the cooled tart shell and spread evenly.
Assembly
  1. Arrange fresh strawberries on top of the pastry cream.
  2. In a small saucepan, heat the apricot jam until melted and brush over the strawberries.
