Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cups buttermilk for marinating
  • 2 cups all-purpose flour for coating
  • 1 tablespoon paprika for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 quart vegetable oil for frying
Sides
  • 4 cups mashed potatoes prepared
  • 2 cups green beans steamed

Method
 

Prepare Chicken
  1. Marinate the chicken thighs in buttermilk for at least 2 hours or overnight in the refrigerator.
  2. In a large bowl, mix flour, paprika, garlic powder, onion powder, salt, and black pepper.
Fry Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
  2. Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture, coating well.
  3. Carefully place chicken in the hot oil and fry for about 10-12 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove chicken from oil and drain on paper towels.
Serve
  1. Serve fried chicken hot with mashed potatoes and steamed green beans.

Notes

For extra crispy chicken, double dip the chicken in buttermilk and flour before frying.
