Ingredients
  

Salad Ingredients
  • 1 pound fresh green beans trimmed
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup almonds sliced
Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Green Beans
  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-5 minutes until bright green and tender-crisp.
  2. Drain the green beans in a colander and immediately transfer to a bowl of ice water to stop the cooking process.
Make the Vinaigrette
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified.
Assemble the Salad
  1. In a large bowl, combine the blanched green beans, cherry tomatoes, red onion, feta cheese, and almonds.
  2. Drizzle the vinaigrette over the salad and toss gently to combine.
