Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts about 6 ounces each
  • 1/4 cup olive oil for marinating
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Sandwich Assembly
  • 4 slices sandwich bread or burger buns
  • 4 slices cheese such as cheddar or Swiss
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/4 cup mayonnaise optional

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Assemble the Sandwich
  1. Toast the bread or buns on the grill for 1-2 minutes. Place grilled chicken on the bread, top with cheese, lettuce, tomato, and mayonnaise if desired. Close the sandwich and serve immediately.
