Ingredients
  

  • cup low-sodium soy sauce
  • ¼ cup pineapple juice from concentrate
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 1.5 pounds chicken tenderloins
  • 1 each red bell pepper deseeded and sliced into strips
  • 1 each yellow or orange bell pepper deseeded and sliced into strips
  • 1 small red onion sliced
  • 1.5 cups pineapple chunks fresh or canned, drained
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together soy sauce, pineapple juice, brown sugar (or honey), ketchup, rice vinegar, garlic powder, and cornstarch until well combined.
  3. Place chicken tenderloins, bell peppers, red onion, and pineapple chunks on a sheet pan.
  4. Drizzle the olive oil over the chicken and vegetables, then sprinkle with salt and pepper.
  5. Pour the sauce over the chicken and vegetables, tossing to coat evenly.
  6. Bake in the preheated oven for 30 minutes or until the chicken is cooked through and the vegetables are tender.
