High Protein Pasta Salad

Ingredients
  

Pasta and Protein
  • 8 oz high protein pasta such as chickpea or lentil pasta
  • 1 cup cooked chicken breast diced
  • 1 cup chickpeas canned, drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the high protein pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and rinse under cold water to stop the cooking process.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, diced chicken, chickpeas, cherry tomatoes, cucumber, bell pepper, and red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
