  • 2.25 teaspoons instant or active dry yeast
  • 3 tablespoons granulated sugar
  • 3 tablespoons unsalted or salted butter softened
  • 3 cups all-purpose flour
  • 1.25 teaspoons salt
Lamination Ingredients
  • 1 cup salted butter
  • 1 tablespoon all-purpose flour
  • 0.75 cup granulated sugar
  • 1 tablespoon ground cinnamon
Fillings (optional)
  • 6 tablespoons Nutella or any other preferred filling
  • jam as desired
  • lemon curd as desired
  • pastry cream as desired

Method
 

Preparation Steps
  1. Warm the whole milk to about 110°F (43°C)
  2. In a bowl, combine the warm milk and yeast; let it stand for a few minutes until foamy.
  3. Add granulated sugar, softened butter, all-purpose flour, and salt to the yeast mixture; mix until a dough forms.
  4. Knead the dough for several minutes until smooth, adding more flour as necessary.
  5. Let the dough rise in a warm place until doubled in size, about 1-2 hours.
  6. Roll out the dough on a floured surface and brush with slightly softened salted butter.
  7. Sprinkle with flour, granulated sugar, and ground cinnamon.
  8. Fold and roll the dough into multiple layers for lamination.
  9. Shape the dough into cruffins and place them in a muffin tin.
  10. Add Nutella, jam, lemon curd, or pastry cream as desired.
  11. Let rise again until puffy, about 30-60 minutes.
  12. Preheat the oven and bake until golden brown, about 25 minutes.
