  • 2 cloves fresh garlic, minced adds flavor
  • 3 tbsp low-sodium soy sauce for marinating
  • 1 tbsp sesame oil for marinating
Noodles and Vegetables
  • 8 oz lo mein noodles cooked according to package instructions
  • 1 cup bell peppers, sliced adds color
  • 1 cup carrots, thinly sliced or julienned adds sweetness
  • 1 tbsp rice vinegar for flavor
  • 1 tbsp vegetable oil for cooking

Preparation
  1. In a bowl, combine soy sauce, minced garlic, and sesame oil. Add chicken pieces and let marinate for 15-20 minutes.
  2. Slice bell peppers and carrots into thin strips.
Cooking
  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken in batches and cook until golden brown (about 5-7 minutes).
  2. Add bell peppers and carrots to the skillet. Stir-fry for about 3 minutes until vibrant and slightly tender.
  3. Toss in cooked lo mein noodles along with remaining soy sauce and rice vinegar. Mix well to coat noodles evenly.
  4. Transfer to plates or serve family-style from the skillet.
