Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for warm days.

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water for soaking
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus extra for garnish
  • 1/4 teaspoon salt

Method
 

Prepare the Rice
  1. In a large bowl, combine the rinsed rice and water. Let it soak for at least 3 hours or overnight.
Blend Ingredients
  1. Drain the rice and add it to a blender with 4 cups of fresh water. Blend until smooth.
Strain the Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a pitcher, discarding the solids.
Add Remaining Ingredients
  1. Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt until well combined.
Chill and Serve
  1. Refrigerate for at least 1 hour before serving. Serve over ice and garnish with additional cinnamon if desired.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as ingredients may settle.
