Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for warm days.

Ingredients
  

Main Ingredients
  • 1 cup long-grain white rice rinsed
  • 5 cups water
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • 1/2 cup sugar adjust to taste
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon plus extra for garnish
  • 1/4 tsp salt

Method
 

Prepare the Rice
  1. Soak the rinsed rice in 2 cups of water for at least 4 hours or overnight.
Blend Ingredients
  1. Drain the rice and add it to a blender with the remaining 3 cups of water. Blend until smooth.
Strain the Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl, discarding the solids.
Combine and Serve
  1. Stir in the milk, sugar, vanilla extract, cinnamon, and salt. Mix well and chill before serving.
  2. Serve over ice and garnish with a sprinkle of cinnamon.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as ingredients may settle.
