  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • 1/4 tsp salt
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

  • 1 tbsp green food coloring for Lilo
Decorations
  • 1 cup edible glitter optional
  • 1 cup coconut flakes for a tropical touch
  • 4 pieces Lilo and Stitch figurines for decoration

Method

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Frosting and Assembly
  1. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth.
  2. Add the milk and vanilla extract, mixing until well combined.
  3. Divide the frosting into two bowls. Color one bowl with blue food coloring and the other with green food coloring.
  4. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of blue frosting on top.
  5. Place the second cake layer on top and frost the entire cake with the remaining blue frosting.
  6. Decorate the cake with coconut flakes, edible glitter, and place the Lilo and Stitch figurines on top.
