Ingredients
  

Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 1/2 cup pine nuts lightly toasted
  • 2 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil plus more if needed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Pesto
  1. In a food processor, combine the basil leaves, pine nuts, and garlic. Pulse until coarsely chopped.
  2. Add the grated Parmesan cheese and pulse again until combined.
  3. While the processor is running, slowly add the olive oil until the mixture is smooth and creamy.
  4. Season with salt and black pepper to taste, and pulse to combine.
  5. If the pesto is too thick, add a little more olive oil to reach desired consistency.

Notes

Pesto can be stored in the refrigerator for up to a week. To prevent browning, drizzle a thin layer of olive oil on top before sealing.
