Ingredients
  

Pancake Base
  • 1 cup oats blended into flour
  • 1 scoop protein powder vanilla or unflavored
  • 1 cup milk dairy or non-dairy
  • 1 large egg
  • 1 tbsp baking powder
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
Toppings
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/4 cup Greek yogurt for creaminess
  • 2 tbsp nuts chopped almonds or walnuts
  • 1 tbsp maple syrup optional drizzle

Method
 

Prepare the Pancake Batter
  1. In a mixing bowl, combine the blended oats, protein powder, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, honey, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
Cook the Pancakes
  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
Assemble the Bowl
  1. Stack the pancakes in a bowl and top with Greek yogurt, mixed berries, and nuts.
  2. Drizzle with maple syrup if desired and serve immediately.
