Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced any color
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add rinsed quinoa, reduce heat, cover, and simmer for 15 minutes until water is absorbed.
Prepare Vegetables
  1. While quinoa is cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
Combine Salad
  1. Once quinoa is cooked, let it cool slightly. In a large mixing bowl, combine quinoa, chopped vegetables, and dressing. Toss to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to enhance flavors.
