Prepare the Raspberries
- In a large saucepan, combine the raspberries and lemon juice. Mash the raspberries gently with a wooden spoon to release their juices.
Cook the Jam
- Add the sugar to the saucepan and stir well. Heat the mixture over medium heat until it comes to a boil, stirring frequently.
- Once boiling, add the pectin if using, and continue to boil for 1-2 minutes, stirring constantly.
Jar the Jam
- Remove the saucepan from heat and let the jam cool slightly. Pour the jam into sterilized jars, leaving some space at the top.
- Seal the jars with lids and let them cool completely at room temperature before refrigerating.
