  • 1 lb fresh salmon fillet skinless
  • 1 cup breadcrumbs plain or panko
  • 1 large egg
  • 2 tbsp fresh dill or parsley chopped
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 ripe avocado
  • ½ cup Greek yogurt
  • 1 tbsp lime juice

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine diced salmon, breadcrumbs, minced garlic, herbs, lemon juice, and egg. Mix gently until just combined.
  3. Form the mixture into balls (about two tablespoons each) and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes or until golden brown and cooked through.
  5. While baking, mash the avocado in a separate bowl and mix in Greek yogurt and lime juice until smooth. Season as desired.
  6. Serve the salmon balls warm with avocado sauce for dipping.
