  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk or milk with vinegar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
Peanut Butter Frosting
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
Caramel Sauce
  • 1 cup caramel sauce store-bought or homemade
Topping
  • 1/2 cup chocolate chips for ganache
  • 1/4 cup heavy cream for ganache
  • 1/2 cup crushed peanuts

Method

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, oil, eggs, and vanilla. Add to dry ingredients and mix until smooth.
  4. Divide the batter evenly between the prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  5. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting and Assembly
  1. In a mixing bowl, beat peanut butter and butter until creamy. Gradually add powdered sugar and heavy cream until smooth.
  2. Place one cake layer on a serving plate. Spread a layer of peanut butter frosting on top, then drizzle with caramel sauce.
  3. Top with the second cake layer and frost the top and sides with remaining peanut butter frosting.
Ganache and Topping
  1. In a saucepan, heat heavy cream until just boiling. Pour over chocolate chips in a bowl and let sit for 5 minutes, then stir until smooth.
  2. Drizzle ganache over the frosted cake and sprinkle with crushed peanuts.
  3. Chill the cake for at least 30 minutes before serving.
