Ingredients
  

Corn
  • 4 ears fresh corn husked
Toppings
  • 1/2 cup mayonnaise or sour cream
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder adjust to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
Preparing the Sauce
  1. In a mixing bowl, combine mayonnaise (or sour cream), lime juice, garlic powder, chili powder, salt, and black pepper. Mix until well combined.
Assembling the Dish
  1. Once the corn is grilled, remove it from the grill and brush the sauce mixture generously over each ear of corn.
  2. Sprinkle crumbled cotija cheese on top of the sauced corn.
  3. Serve immediately with extra lime wedges and chili powder if desired.
