Base Mixture
  • 1 cup long-grain white rice
  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup tomato sauce
  • 2 tsp garlic powder
Vegetable Layer
  • 3 pieces bell peppers (mixed colors) sliced in halves or quarters
Topping
  • 1 cup shredded cheddar cheese

Cooking Steps
  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat and add the chopped onion; cook until soft.
  3. Stir in rice, diced tomatoes, tomato sauce, garlic powder, salt, and pepper. Simmer for about 10 minutes.
  4. Layer half of the meat mixture in the baking dish, place pepper pieces on top, then spoon the remaining mixture over them.
  5. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes until cheese is melted.
