Ingredients
  

Savory Sandwiches
  • 8 slices white bread crusts removed
  • 4 oz cream cheese softened
  • 1 cucumber thinly sliced
  • 4 oz smoked salmon optional
  • 1 tbsp dill fresh, chopped
Scones
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup sugar
  • 1/2 cup butter cold and cubed
  • 1 cup heavy cream
  • 1 cup mixed berries for serving
Sweet Pastries
  • 1 sheet puff pastry thawed
  • 1/2 cup jam of choice
  • 1 egg beaten for egg wash

Method
 

Prepare Savory Sandwiches
  1. Spread cream cheese on 4 slices of bread. Layer with cucumber slices, smoked salmon, and dill. Top with remaining bread slices and cut into quarters.
Make Scones
  1. Preheat oven to 400°F (200°C). In a mixing bowl, combine flour, baking powder, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in cream until just combined. Turn dough onto a floured surface, knead gently, and shape into a circle. Cut into wedges and place on a baking sheet. Bake for 15-20 minutes until golden.
Prepare Sweet Pastries
  1. Roll out puff pastry and cut into squares. Place a spoonful of jam in the center of each square. Fold over to form triangles and seal edges. Brush with beaten egg and bake at 400°F (200°C) for 15 minutes until golden.
