Ingredients
  

Salad Base
  • 2 cups mixed salad greens such as romaine, arugula, or spinach
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup peanuts chopped, for garnish
Dressing
  • 3 tablespoons lime juice freshly squeezed
  • 2 tablespoons fish sauce or soy sauce for a vegetarian option
  • 1 tablespoon sugar or honey
  • 1 clove garlic minced
  • 1 teaspoon red chili flakes adjust to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed salad greens, cucumber, carrots, red bell pepper, red onion, and cilantro.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and red chili flakes until the sugar is dissolved.
Combine and Serve
  1. Drizzle the dressing over the salad and toss to combine.
  2. Garnish with chopped peanuts before serving.
