Tomato Basil Pasta

Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 2 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 4 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup parmesan cheese grated, optional

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving a cup of pasta water.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add halved cherry tomatoes and cook for about 5-7 minutes until they start to soften.
  3. Stir in chopped basil, salt, and pepper. Cook for another 2 minutes.
  4. Add the cooked pasta to the skillet, tossing to combine. If the mixture is too dry, add reserved pasta water a little at a time.
  5. Serve hot, topped with grated parmesan cheese if desired.
