Ingredients
  

Pasta and Tuna
  • 8 oz pasta any short pasta like fusilli or penne
  • 1 can tuna drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup black olives sliced
  • 1 cup frozen peas thawed
Dressing
  • 1/4 cup mayonnaise
  • 2 tbsp Greek yogurt optional for creaminess
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, tuna, cherry tomatoes, cucumber, red onion, black olives, and peas.
Make the Dressing
  1. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, dijon mustard, salt, and pepper until smooth.
Combine and Serve
  1. Pour the dressing over the pasta mixture and toss until everything is well coated. Garnish with fresh parsley and serve chilled.
