Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp taco seasoning
  • 1 cup cooked brown rice or quinoa
  • 1 cup sliced bell peppers
  • 1 cup canned black beans drained and rinsed
  • ½ cup salsa
  • 1 avocado sliced
  • ½ cup shredded cheese

Method
 

  1. Cook the brown rice or quinoa according to package instructions; set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook for about 5-7 minutes until browned, breaking it apart as it cooks.
  3. Stir in taco seasoning and ¼ cup water; simmer for a few minutes until well combined.
  4. Add sliced bell peppers to the skillet and sauté for an additional 3-4 minutes until slightly softened.
  5. Mix in black beans and heat through for about 2 minutes.
  6. Assemble bowls by placing cooked grains at the bottom, topping with turkey mixture, salsa, avocado slices, and shredded cheese.
